Il Borro Chardonnay is proof of the company philosophy applied to a monovarietal, of the aim of obtaining the highest expression from a single grape variety by giving it the most characteristic feature of the greatest wines of Il Borro, where elegance and refinement come together with a great structure.

A Sangiovese that evokes the past and Tuscan winemaking culture. Vinification exclusively in Tuscan terracotta amphoras. Maceration on the skins for 12 months, during which interaction with terracotta and micro-oxygenation shapes it balance and minerality.

A hymn to Sangiovese grape. Single variety winemaking using selected indigenous yeasts, and harvesting the best grapes from the Polissena Vineyard. Situated at 350 a.s.l. on the slopes of Mount
Pratomagno, with optimal exposure and major variations in day and night temperatures.

Pomace from Il Borro, the winery’s most prestigious wine, is distilled with the artisanal discontinuous cycle-stills method and manual cutting of heads and tails. 18 months in French oak barriques gives the grappa an elegant aroma and a velvety, persistent taste.

Selection of the best clusters of Sangiovese grapes, hand-harvested in crates and manually hung up to dry. After 3 months, the grapes are gently pressed, and the must obtained is decanted into oak and chestnut wood kegs, where it ferments and ages for at least 5 years.
